Gorgonzola Baby Potato Bites
- 20 tiny potatoes
- 4 oz (115 gram) cream cheese
- 2 oz (55 gram) Gorgonzola cheese
- 1/4 cup (60 ml) bacon bits
- 2 tbsp chopped fresh basil
Boil potatoes in salted water. Cool under cold water to stop cooking process.
Slice each potato in half. Trim the bottom so they won’t tip over.With the tip of a small knife scoop out a small "dint" in the potato. This will help to hold the cheese.
Allow cheeses to reach room temperature. Blend well.
Cook bacon, drain on paper towel. Then chop up to make the bacon bits.
Add bacon bits and basil to the cheese.
Dab a spoon of mixture on top of each potato.
Set on a cook sheet and bake for 10 minutes at 350 (F) | 180 (C).
